Usually with a single saber staff and dual pistols. I know that a double saber staff is likely the most devastating and, by the end of the game, I'll be simultaneously holding a single saber for one weapon configuration and a saber staff for the second configuration. I'm pretty much done with long ranged weapons for my PC by the time I've made it through 3/5 of TSL.

For Kotor, I pretty much always use single saber. I love to use Wotor weapons on the side sometimes.

For kotor, I tend to use a soldier, Consular build... A soldier to get my dueling stats well than the counsular to build a strong force arsenal (I focus on using dark side powers, whether im light or dark side)... I tend to hace a high wisdom, charisma and dexterity rating, followed by strength and skills is each to his own

Kotor two, I tend to use a Gaurdian, jedi master build... same deal applies as kotor, I use the jedi gaurdian to do my feats up so I am a strong dualist, than I use jedi master/sith lord to strengthen up my force power arsenal (I like a mix in force powers with kotor 2, as some of the universal and light side powers are very useful to use)... Again, I tend to use a high strength, charisma and wisdom to strengthen my force powers and dueling again (This build tends to get everything you need by lvl 30, so you can do what you want after that)

I like using single saber for both characters...

I tend to go for a sentinel, It's just such a good middle ground. I usually use two lightsabers and I always get most of the ds powers, even if playing a lightside game. Which class I start as is pretty variable.

As for my followers in k2, I normally give Atton dual sabres and pistols, I normally make sure he gets the anti-force powers, (resistance, suppression/breach etc.) and he gets all the precise shot feats.

Bao-Dur normally gets a double-bladed lightsaber and insanity, everything else varies.

I always give Mira a single lightsaber and a rifle/pistol. I normally give her all the non-lethal force powers and max out precise shot.

Mical tends to end up with a doublesaber and a lightsaber with short sabre combo. Then he gets basically every area of effect force power I can give him.

Handmaiden normally gets a single sabre with her quarter staff for if anyone has a shield. Normally give her force speed, force armor... anything that makes her a more efficient killer. I tend to get her dueling and mobility.

Kriea just spams out as many high level force powers as possible plus single sabre.

KotOR 1? Oh boy, that is the most hilarious one, I think. You can end up being an OP Light Side (max alignment) bastard by halfway through the game, because of the possibility of -three- "specialisations". What I go with is 16 STR, 14 DEX, 14 CON, 14 INT, 10 WIS and 8 CHA. For attribute increases, DEX until it hits 16, then bring invest the remaining points into WIS, until the last level up. The last level up's attribute is whatever suits you, because it doesn't matter by that point anyway. For Feats lines, I max out Flurry, Conditioning, Lightsaber and invest two into Toughness. Force Powers, the following: Heal, Speed, Valor, Push or Stun are maxed, with either two FPs into Stun Droid (for droids and the Malak fight) or one into that and the second in Affect Mind for teh lulz. As far as items go, Circlet of Saresh, Karakan Gauntlets, Adrenaline Stimulator, Qel Droma Robes (swapped for Star Forge robes at the end) and the Heart of the Guardian+Upari+Opila lightsaber.

So, what this means is that you should have a 12 natural WIS by level 19, right? With the Circlet of Saresh, it's 17. With Master Valor, it's 22, and with the Qel Droma robes it's 24. By the Star Forge, with the namesake robes, it's 27. STR is either 24 or 25 (depending on what you want to invest the last attribute point) and DEX is 24. We can dodge practically everything, inflict a ton of damage with our lazorblade and nothing will resist your Force Powers. To break the game even further, the Scoundrel gets the sneak attack feats. (NOTE: you don't stop leveling up after the Endar Spire, keep doing it for the Sneak Attack). Those increase the damage to ludicrous numbers and trigger when one of the two happens: the targeted NPC is either stunned (Stasis Field/Wave, though I prefer Wave because it works on droids as well) OR the targeted NPC is attacking someone else in the party. Master Speed, Sneak Attack and 25 STR obliterates anything in your path. The INT is there for skills. You DON'T want the following in KotOR 1, because they give you no benefit and are practically useless: demolitions (you can walk through mines), awareness (no hidden options), security (bash is always a possibility, aside from Korriban, but I'll get to that later), stealth and -maybe- computer use. It's a waste of skill points to invest into the aforementioned skills, in my opinion, because your other party members can do that (T3 for computer use, security and repair; either Juhani or Jolee for awareness, but barely required) and there is no instance in which the player is alone and forced to use either one to receive the best outcome (you can just bash or security the door leading to Malak, once he reveals his trap of d00m after the Bastila boss fight).

Repair isn't even that needed, if it wasn't for repairing HK-47 before the Leviathan mission.

KotOR 2 is harder because of the skill requirements early game, but if you play your cards right, you can end up in the exact situation as in KotOR 1 with the player character.

...don't know why I didn't add this to the original post:

After my first two Saber run (sorta boring), I went with Saber Staves or Blaster Pistols in KotOR.

In KotOR TSL I usually go with Blaster Pistols. My last run was was a Single saber tank. My current one is using Blaster Rifles.
