I know why it happens!!!! It took me an hour, but I narrowed it down to this file in the Override folder: "w_ionrfl_004.mdx.mdx" See how it has ".mdx" two times? Yeah, that's bad and makes the file unusable, therefore the crash. Simply remove one of the ".mdx" and enjoy the elevator ride without crashing. I followed the "Kotor 1 Full build" guide on https://kotor.neocities.org/ and I know it happened to other people as well. If it happens to you, now you know how to fix it!
